This was the compulsory coffee for a roasting competition Neal Wilson was entered in. That competition is canceled, which leaves us with a very limited amount of this excellent coffee from Fazenda Rio Verde. This red acaia coffee dried in its fruit, meticulously sorted, and packed in 10Kg nitrogen flushed aluminum bags presented a range of potential flavors unlike any Brazilian coffee we've sold. The roasting plan chosen is a fast medium roast designed to accentuate the juicy sweetness of the coffee with an apple-like flavor while preserving potent aromatics. Roasted in small batches, we expect to produce only 30 pounds of this unique coffee.
